Polenta is a typical dish of the ancient peasant tradition of the Bergamo region and here at Molino Nicoli we have been making it since 1869. In agriculture, a more than a hundred-year-old experience of cultivating maize has created a tradition that is not to be forgotten, which has to be passed over to the next generations. In order to make our COME UNA VOLTA POLENTA (where COME UNA VOLTA literally translates into English as “AS IT USED TO BE”) at Molino Nicoli we select and use maize that comes exclusively from our controlled agricultural supply chain. This means that our maize has been cultivated here in Italy, contains no GMO-ingredients and is gluten free. Our maize is dried at low temperatures only, a process that makes it possible to maintain the original nutritional properties of the kernel. After milling, our COME UNA VOLTA YELLOW POLENTA FLOUR, a totally natural product, is ready to be served and tasted at your table!
